COCONUT GROVE, FL -- A seven-day cooking course offered by Tuscan Way, a provider of packaged and custom tours to Italian destinations, immerses its participants in the foods and culture of southern Tuscany. A four-day package is also available.
Staying at "Casa Innocenti", the picturesque medieval home of the chef and host, Carlo Innocenti, in the small village of Arcidosso, guests are taught "La Cucina Povera", the simple and flavorful style of southern Tuscan dishes. This was the peasant's cuisine -- centuries of creativity and limited international food supplies led southern Tuscans to explore every imaginable ingredient and recipe combination available locally. The relaxed, informal style of cooking, a glass of local wine always within arm's reach, the small group (maximum of eight guests), and the personal attention given by the host, produces a member-of-the-family atmosphere not found in more formal schools.
Carlo Innocenti teaches five hands-on cooking courses throughout the week, hosts a wine-tasting session and leads his guests through local markets, restaurants and vineyards. Four excursions are planned to nearby villages that include Montalcino, known for the vineyards that produce the celebrated Brunello wine; the pretty seaside village of Castiglione della Pescaia; and Sovana and Pitigliano, with their ancient ghettos and Estrucan tombs.
Carlo is a man of many resources -- an experienced wrought-iron artisan (many of his works are showcased in the home); past owner of two discotheques and the exclusive Harry's Bar in Punta Ala, southern Tuscany's famous beach resort; teacher of Tuscan cuisine to elite clientele in Switzerland; and photographer and cinematographer for his own documentary production company.
The five-story "Casa Innocenti" dates back to 1100 A.D., is the highest house in the village, and is next door to the village's castle. "La Cantina", the elaborate wine cellar and one of several dining areas, is on the bottom floor; the first floor has a living room, dining room, a large rustic kitchen where the classes are held, patio and garden; floors two through four have bedrooms, bathrooms, living room, private kitchens and a library. Views from the windows take in an entire piazza, the village, castle and Monte Amiata, southern Tuscany's highest mountain. Ancient terra-cotta floors and wooden beams give rooms traditional warmth and furnishings are Italian antiques, artifacts and paintings.
The seven-day course is $2,090 per person double, $2,390 for singles, and includes accommodations, food, wine, airport transfers to and from Rome, Florence or Pisa, and local transportation for scheduled excursions. The four-day course is $1,140, double occupancy; $1,290, single occupancy.

COCONUT GROVE, FL -- Travelers booking a Tuscan Way four-day or seven-day cooking course vacation for 2001 and paying in full by December 31, 2000, will be charged at the 2000 rate -- $1,140 and $2,090 per person double, respectively -- a savings of $100 of next year's rates for each package. Tuscan Way is a provider of packaged and custom tours to Italian destinations.

Participants are taught an array of dishes with a focus on the specialties of the season: soups, game meats and traditional holiday cakes in the winter; fresh vegetables and seafood in the spring and summer; and freshly pressed olive oil, sauces with mushrooms and truffles, chestnuts and game meats in the fall; all accompanied by outstanding Tuscan wines from the Innocenti cellars.
Sitting around a large wooden table, guests learn how to plan the meal, how to choose the best ingredients from the right shops, prepare those ingredients, choose which plates and wine glasses help accentuate the meal, decide on the proper wines, and finally, cook the meal, guided by Carlo's expert suggestions and knowledge. This process fosters the sense that the meal is about the shared company of friends and family, and the effort taken in preparing the atmosphere, as well as the meal.

IS THE FESTIVE FOCUS OF TUSCAN WAY'S EIGHT-DAY TOUR
COCONUT GROVE, FL -- Southern Tuscany's great wine-harvest festival -- "La Vendemmia" -- is the focus of a eight-day Tuscan Way tour to the wineries of Montalcino, Scansano and Montepulciano, where the "kings" of Tuscan wine -- Brunello, Rosso, Morellino and the vino nobile of Montepulciano -- are produced.
Tasting is scheduled at each vineyard, and guests actively participate in
La Vendemmia, helping to pick the grapes and learning of wine-making and its
traditions, at Leoni Farmhouse, a vineyard and working farm in Arcille, near
Scansano.
The tour departs September 27, 2000, when guests are picked up at
Fiumicino International Airport in Rome, or the Florence airport in Florence,
and driven to Tuscan Way headquarters, Casa Innocenti, the picturesque medieval
home of the chef and host, Carlo Innocenti, in the small village of Arcidosso,
where they stay during the tour.
Daily excursions from Arcidosso visit Montalcino and Scansano, walking
through these charming hill towns with Carlo as guide and tasting Brunello and
Morellino with his expert guidance as well as that of the local vintners;
Santafiora, a medieval village that Dante cited in "The Divine Comedy"
and where an elegant Romanesque church holds pottery by the celebrated
Renaissance artist Della Robbia; the little villages of Monte Amiata; and the
town of Montepulciano, whose architecture rivals its wine in reputation.
A Sunday morning stroll with Carlo through the markets of Arcidosso
offers a lesson in choosing the best Tuscan vegetables and meats.
Carlo himself cooks dinner nightly at Casa Innocenti, each meal
accompanied by an outstanding Tuscan wine from the Innocenti cellars.

SHOWCASE THE 'KINGS' OF TUSCAN
WINES
COCONUT GROVE, FL -- Tuscan Way, a provider of packaged
and custom tours to Italian destinations, has introduced seven-day wine tours to
Tuscany, focusing on the wineries of Montalcino, Scansano and Montepulciano,
where the "kings" of Tuscan wine -- Brunello, Rosso, Morellino
and the Vino Nobile of Montepulciano -- are produced.
Tasting is scheduled at each vineyard, and time is provided to explore
the cultural areas of the villages and shop for the wines, olive oils and
Etruscan ceramics for which Tuscany is famous.
Guests are picked up in Florence and driven to Le Casacce, a 400-acre
working country estate outside the small villages of Castel del Piano and
Arcidosso. Amid the estate's olive
groves and grazing land, with Monte Amiata, southern Tuscany's highest mountain,
as a backdrop, is the main house with a restaurant, two sitting rooms and a
portico. Three adjacent farmhouses,
with eight apartments total, are furnished in typical Tuscan style, with modern
amenities and rustic fireplaces.
Daily excursions from Le Casacce visit Montalcino and Scansano, walking
through these charming hill towns with a guide and tasting Brunello and
Morellino with the expert guidance of the local vintners; Pitigliano, a medieval
village still dominated by its 14th-century main square, Piazza della Repubblica,
where lunch is accompanied by the much celebrated local wine, Bianco di
Pitigliano; the town of Montepulciano, whose architecture rivals its wine in
reputation; the little villages of Monte Amiata -- Santa Fiora and Abbadia San
Salvatore -- and Sovana, a village with Etruscan-Roman foundations, medieval
homes and a 15th-century Romanesque church.
A visit to Casa Innocenti, the picturesque medieval home of chef and
Tuscan Way co-founder, Carlo Innocenti, in the small village of Arcidosso,
includes a tour of the five-story home and a home-cooked dinner, served with a
variety of Tuscan wines from Carlo's private wine cellar.
The price, $2,290 per person, double occupancy, covers six nights'
accommodations; all meals, with Tuscan wines; transportation throughout,
including airport transfers; and all excursions.
Single supplement in each case is $350.
Departures begin April 22 and run through October.
