BRUSCHETTA TOSCANA

Tuscan style Bruschetta

 

This is a very popular Tuscan appetizer.  The bruschetta was originally prepared by the peasants to taste the newly made olive oil.  The simplest ingredients – just bread, olive oil and salt - guarantee the full taste of the extra virgin olive oil.

 

INGREDIENTS

  • 6 slices of Tuscan bread (1 cm thick – approx. .5 inch)
  • Extra virgin olive oil
  • Garlic
  • Salt

PREPARATION

  • Place the slices of bread in the toaster or on a grill over fire.
  • Grill until slightly brown. Place on a large plate.  
  • Cut the head of a slice of garlic.  
  • Rub the garlic on the bread.  
  • Add about 1 tbsp. of oil to each slice of bread.  
  • Wait until the oil is absorbed.  
  • Add salt and serve.

Chianti Rùfina

 

This is a full bodied, ruby red wine with a hint of purple that goes well with appetizers like the Bruchetta Toscana, as well as Tuscan red meat, game and poultry when stewed. The wine is made from a combination of Sangiovese (90%) and Canaiolo nero (10%) grapes, which gives its medium dry body balanced perfectly with tannins which remains harmonic and persistent to the palate.

 

This particular wine originates from vineyards in the lands surrounding San Martino in the Chianti Rufina region, which gives its distinctive flavors and is just one of the DOCG wines available from this area of Tuscany.
